I want to select another "Default scheme for Software projects" to anther permission scheme that I created. The current scheme is open to Any logged in user. I don't want to modify the existing default scheme, but rather switch to the one that I have created.

If I understand your requirement correctly then you are willing to change the permission scheme to the other(custom) that you have created.
Kindly try below steps:
1. Go to Project Settings from left side Menu.
2. Click on permissions
3. On the right side of your screen on top you will see the "Action" button, click on it.
4. Select the option "Use Different Scheme" from the drop-down.
5. Now you have to choose the scheme that you are willing to use for your project.

1. You can edit or switch the permission scheme from here:
Project Settings -> Permissions -> Action -> Edit Permissions
2. You can create a copy of the default permission scheme from
Setting -> Issues -> Permission Schemes -> Copy
