Change the workflows of many projects at once

Hello,

We have setup an instance of JIRA and created 30 projects in it. We now want to modifiy the default workflow.

How should we proceed ?

Apparently we can't modify a workflow that is used by projects, so should we create a new one ? how to switch to this new one for all 30 projects at once ?
