I have multiple teams reporting that changes in Start and end dates in Plans disappears after applying changes. Has anybody experienced this or can provide possible solutions?

I have exactly the same problem, I have a custom date field in every epic and there is one epic where the date just disappear after it's added. No solution yet, but the user complains...
