I have a plan that's been built and it shows tasks and sub-tasks. I want to be able to color-code these tasks per the individual who will complete them (employee 1's sub-tasks are blue, employee 2's are red, etc.). Any idea how I could go about doing that? Color coding by assignee is not supported, unfortunately. The closest you can get right now is by team, but that would not solve what you are trying to do, obviously.
I suppose you are aware that you can display the assignee in the Fields section on the left side of the timeline. You could even set uo a custom view with only the assignee field displayed, so it becomes easy to see who the assignee is for each issue.
You can also group the issues by assignee. That will split the hierarchical view in separate sections, but again: you could set this up as a separate custom view that you use when you need this information by assignee.
To actually apply colouring by assignee - to literally answer your request - you could try to leverage one of the other supported options, like using labels. That would mean you also need to set a label to your issues when you assign them to a specific person (that can be automated), which you can then use to set colours. While technically possible, I would honestly rather look at some of the other options I mentioned to solve your actual problem.
