We are new to Jira Software and will be importing our backlog and possibly other elements from CA Rally. I understand that the method for doing so is a CSV import, which I am fully prepared to do. What I'd like, however, is a complete list of all the data elements (not custom) to map the Rally data to Jira. I need to fully understand where the gaps are between the two systems so I can create custom fields prior to importing, otherwise I risk loosing a lot of data.
Is there technical documentation somewhere that has a full schema or list of fields? Or do I need to pick through documentation and screens to get this information?

There's nothing specific for a list of fields, but you can save yourself 99.9% of the "picking through the documentation" by hitting https://confluence.atlassian.com/jirasoftwareserver/advanced-searching-939938733.html scrolling down a way until you find the table "Reference" and expanding the line "show list of fields" in the first line of the table.
That is only for Core Jira though, you will need to think about the Software fields such as sprint, Epic name, Epic link, Epic Colour and Epic Status possibly.
Note that some of these are not settable fields (work ratio for example)
