My team is getting alerts by dailly email that say:
Issue Subscription Filter: Alert: My Overdue (1 issue)
Subscriber: mysme@mycompany
Key Summary PMO-16 Ops Demos set to be completed
This task is completed and closed. How can I stop these emails?

if you just want to stop the emails if the issue is done, then you should find the filter (probably "Alert: My Overdue") and change the filter so that issues in Closed status (or whatever status you want to filter out) will be ignored.

The Team member who set up this filter has moved on. Any suggestions on how to change it? It will only let me save as….

You can also ask the System Admin to make you the new owner of the filter, then you can change the filter.
But if I have a look on that JQL, it is already looking if there is a resolution set. It seems, that you did not set the resolution when closing that issue, if you would have done that, it would also stop sending you emails.
But changing to filter to check the status if you do not want to use resolutions will also work.
