We have a team-managed project and the board was set to Scrum.
We want to change it to a Kanban project with a backlog of issues that do not show on the board. We can do that in other projects that are company managed because you just create a new Kanban board and then there is a backlog column in the configure board page, but for team managed we can only turn off the sprints function.
When I did that and moved the to do status into the unassigned status's column then all of the issues are also removed from the backlog.
How do I set up a team managed project so that we have a backlog of issues that do not show on the board, and are then moved onto the board by changing the status

With a Team Managed project showing an issue on the board or in the backlog for a Kanban board is not based on the Status of the issue. That applies only to the Kanban boards created for Company Managed projects or created based on Saved Filters.
In a Team Managed project Kanban board whether a card shows on the board is based on which section of the list you see it in on the Backlog screen.
If the issue is shown in the upper section labeled "Board" then the issue will show on the Board view. If it is in the lower section labeled "Backlog" then it will not show on the board. Drag issues between these two sections to put them on and take them off the board.
An issue can be in any Status and be in either the Backlog or on the Board.
