Will copying JIRA Software production data (Projects, Dashboards, User Stories, Apps, etc) to the sandbox impact anything to the JIRA Software production version? Is there a need to backup and copy the production data first before the copy? Please advise.

No, it wouldn’t impact your production instance – sandbox environments are designed to be separate from production, allowing you to test changes, apps and new features without affecting your live data.

Thank you for your response! I wanted to doublecheck to ensure prod data isn't lost. That would've probably got me kicked out the door pretty quick.
Aside from that question, is there a way to copy the production data to have as a back up, in case if you accidently deleted the prod data but needed to restore the previous data to a previous date? Let me know if I'm just speaking noobish.

Yes, there’s a way to back up your Production Jira Cloud site data. As per this knowledge article:
To create a backup for cloud:
Select Settings () > System
In the IMPORT AND EXPORT section, select Backup manager.
Under Backup for cloud, select Create backup for cloud.
You can tick the Include additional files option if you want to include issue attachments, user avatars, and project logos in the export.
After the backup is complete, select Download backup file.
