I am looking for some documentation to understand what each workflow status mean and when they can be assigned as appropriate. Workflow details with regards to issue type 'bug'.

Most of us try to define status with names that says what they are, and Atlassian does the same with its defaults. "To do" means the issue needs something doing about, "In progress" means it is in progress, "Done" means it is done, and so on.
Status are configurable, and you don't have to use the defaults Jira gives you. If you don't know what a status means from its name, then ask the admins who created it what it is intended for (and suggest renaming it to something more clear)
You have to speak to your jira and project admins and have them tell you all about the statuses being used to all your workflows. There are some pretty straight forward statuses like "ToDo", "In Progress" and "Done", or "In Review" etc, but each company and each project manager with their team can possibly mean different things. So it's best if you talk to them and guide you through.

Each status will mean what you want. In Jira, you're free to create your own workflow with you own status and decide why and when you can transition an issue to a status.
