When going into settings, Organization under Organizations & Security brings me to a screen saying "create your organization". Is this supposed to be the case? Wouldn't I already have an organization?
I'm trying to make it so that I can log into JIRA with exclusively a username and password for a single user but for the rest of the org they have to log in via google single sign on account.
Any idea how I can make this happen?

I don't know how known you are with the organization structure, but an organization is a collection of customer accounts on a project.
Then you can "grant" an organization access on issues so that everyone in that organization can access those issues through the portal.
As for the google single sign in, i think you better create a new question for that to get a quicker anwser.

To confirm, collection of customer accounts implies service desk customers? Is that what you're referring to?
