Create custom work log that can be hidden from business users or consultant

Can we create a custom field or is there a option to hide the worklog from business user or consultants

If you could just use a custom field that could be "hidden" from a certain group of users, I see there's a few add-ons for Jira Cloud, but I don't have experience with them:

Not sure what field type would work well for a "worklog" though. I guess you could just keep appending information to a multi-line text field?

If you wanted to get fancy, I suppose you could have a single-line text field to log a "private work entry", and set up Automation where if that field changes, it appends the text to the "private work log" field along with a timestamp?

Oh and then it would clear the "private work entry" field for the next entry.

Natively, no, there's no "view worklog" permission.

I know Tempo can do it on Server, not so sure about Cloud.
