I added a Security Level dropdown to my Create Issue screen.
I would like to hide it from our customers who are also using my JIRA project.
Can this be done?
If you remove the customers permission to "set issue security", that particular field will disappear (I'm assuming it's the system "security level" field)
Can it be done with a distinct Workflow, Screen Scheme, Permissions, etc?
Meaning can it be done at all without the plug in?

You're looking for field level security, which native JIRA doesn't support. I believe the Behavior plugin and some others do.
