Creating Subtask - No fields or screen available to edit

The only way we can create a subtask is with the title field, there's no longer a screen I can find. This means you have to create the issue in two steps and it is automatically assigned to the default assignee for the project. Big issue for us.
I no longer have subtask as an option in issue type when using the create issue screen either.
Any advice?
