Hi @Alexis Galicia Treviño welcome to the community. Are you by chance using Automation in your Jira project? It sounds like someone has setup some Automation so that when a ticket is created in Jira, the Due Date is being set based on some specific rules.
So if you're typing it in, when the ticket is changed, the Automation is updating the Due Date for you.
Under your Project, if you click on 'Project Settings' there should be a selection for 'Automation'. If you click into that, you should see all the Automations that are setup in your system. If there is one, you can adjust it, or turn it off and not use it.
Hope that helps.
Hola
