in jira in the new task´s, bug´s. sub task´s etc,,,, How do I change the content and how to display the information that arrives in the mail when creating or editing the incidents

JIRA creates, or comments on, issues when it gets incoming email, and it uses the information in the mail to do so.  So I'm not quite sure what you are asking for here?
