I'm looking to see if there is any way to customize the JIRA macro to create an issue and force the issue type and project (at the minimum, but maybe other options). This would help our team streamline the creation of tasks and issues when reviewing documentation and the like within Confluence.
Any ideas?

This is not currently possible in Confluence, but I created a feature request for this:
The JIRA Issues Macro will display whatever projects that the user has permissions to use. You can control these settings within JIRA project permissions.
