Which elements are possible to show up in a task and sub-task card of a classic project?
Looking in my projects, at the moment I can see the priority, the workflow status and the assignee. Is there also a possiblity to show up a label, component or custom field?
I want to assigne a category on overy sub-task, but I need an overview of this information without entering in every single sub-task.

You can define which sub-task issue fields are displayed in the sub-tasks section of a parent issue in system Advanced Settings.

BTW: Updating jira.table.cols.subtasks in Advanced Settings has no effect in new experience

It seems that this kind of customization is not working in the new issue view of JIRA, correct? I tried to add the "labels" field and it's show up only in the old issue view. Do you know an alternative method to show up an information like that in the new issue view?
