I would like to add fields to my list and overview on a global level for all my current users.
The link below was showing me only the possibility for myself but not globally

This is currently not possible with Jira Work Management project lists. The changes you make will only be see by you, and each user must make the changes themselves. The hope is that they will add this ability sometime in the future.

Just to add to John's answer: If you're open to solutions from the Atlassian Marketplace, you could try JXL for Jira. It's a full-fledged table/spreadsheet view for your issues that can be configured to match your exact needs - including, of course, by adding, removing, and arranging fields.
In JXL, this configuration is, by default, shared across all your users.
