When creating a channel for a particular Jira issue in Jira through:
And then selecting + Create new Channel
It defaults to issue-<project name>-key
For example for project XYZ and issue 123 it will default to:
issue-XYZ-123
Is there a way to change that default?

The official Atlassian-provided Slack integration for Jira Server doesn't include a way to change the default template for channel names. As you mentioned, it'll use the "issue-" prefix and then the Jira issue key.
Although the auto-generated value can't be tweaked, you can modify the name after you click the link and before the channel is created. And after the channel is created, the user who created the channel should also be able to rename the channel in Slack itself.

You will need to read the docs from the vendor that wrote the 3rd party Slack App that you are using. There are a dozen or so vendors that have a Slack App. This is not built-in functionality.

Understood, however we are using the one written by Atlassian (not a third party), and I could not find it anywhere in the docs:
