Jira Cloud is not a product; Cloud is an environment. Within that environment, you can find Jira Software, Jira Service Management, Jira Align, Confluence, Jira Work Management, Atlas etc. These are individual products.

Jira Cloud is not a fair comparison in your list. It's simply where Jira is hosted. So it would be more suitable to compare it to Data Center (On Prem). So let's start there:
The main differences are that Cloud is Atlassian's desired future and where they are investing the bulk of their R&D but suffers from limits on features like how many automation executions can be executed or how marketplace apps are allowed to interface with the products.

Jira Cloud is the hosting method (Data Center is the other hosting method).
Jira software is a product built for software teams, and Jira Service Management is a product built for teams that need to manage service requests, etc.

Jira cloud is the version of JIRA hosted on Atlassian infrastructure, you have nothing to managed from infra stand point.
Within Atlassian Cloud you have JIRA Software, Service Management and Work Management.
JIRA Server no longer exist but Data Center version replace it.
JIRA Software is meant to bring tools to help managing project development but not only. It brings to jira Scrum/Kanban boards and the ability to manage Sprints
