Does Jira no longer include an issue type/workflow preview before setting up a project?

So I'm going through the certification for Project Admins and it seems to be using an older version of Jira. In the Demo it gives you a preview of the issue types and workflow before selecting the project.  The live version of Jira Cloud seems to only show a very layman's understand of the project when you're creating one. 

Is this a change they're made or is there another way to get this information?

Correct, ever since Jira Cloud moved to the new UI they changed what information you get for the different templates. You can get more information about the template by clicking on Change template, but it does not show the workflow.

On Jira Server you still see a preview of the workflow and what issue types are associated with the template.

I believe all certs are based on the server version of the tools, just because it does not change as often as cloud. The details for the Project Admin one mentions Jira 7 Enterprise Releases as the product version.
