What happens when the deadline expires in the field "due date" in an issue in JIRA?

Nothing.

It gets picked up if you're using certain predefined filters (look for "overdue" in the project reports), but that's all. Some reports highlight it on display as well. But nothing changes or gets triggered by deadline expiry unless you define something to do it.
