Can we create our own email template for auto-email whenever we change status update of an Issue?
So that we can use those for our issue acknowledgements etc.

The customization of email notifications is only available for customers on Jira Service Management projects, as described in this documentation.
For Jira software projects and internal users, there is no way to edit the notification template. We have a feature request to consider this possibility in the future:
Allow customized emails for the notifications in Jira
Feel free to vote and watch the suggestion to increase its priority and also receive notifications about any updates.
As a workaround, you can use Jira automation to properly send the notifications and turn off the default issue notifications.
