Do you know if it's possible (how to) to edit the ticket fields in the dashboard view?
Should be a nice improvement?
is it a requirement for you to make these changes on a dashboard?
If not, you may want to have a look at JXL for Jira. It's a full-fledged spreadsheet/table view for your issues in which you can inline-edit any field (either individually, or in bulk via copy/paste).
This is how it looks in action when I change the status (first individually, then via copy/paste):
JXL comes with much more - quick sorting and filtering, hierarchy support, export, etc. etc. More at https://jxl.app.

These are quick buttons with JQL inside and updating the dash in real-time, filtering the views, charts, tables...
Can't see it in the small demo video available.

the way you do this in JXL is to create different sheets, each with its own JQL, as it's very easy to switch between sheets:
But it's also worth noting that the "in sheet" sorting and filtering is very powerful, so often, it may be easier to just quickly narrow down a sheet to whatever you're interested in:
(We'll also soon start working on a system that is very similar to "quickfilters" in boards. This will look and feel very similar to your screenshot above. I expect this to land in the next couple of months.)

yes and yes :)
Sheets are very similar to Boards, in that they exist "within" a project, but can pull in issues from multiple projects via their JQL statement.
E.g., in the screenshot below, the sheet lives in "Fine project" (key "DEMO"), but pulls in issues from DEMO and QA:
