I am trying to edit a workflow scheme that I copied from an existing project. The original and copied workflow schemes have the following verbiage:
Generated by JIRA Software version 1001.0.0-SNAPSHOT. This workflow scheme is managed internally by Jira Software. Do not manually modify this workflow scheme.
I also utilize Scriptrunner add on for some cloning automation.
How do I edit the copied workflow scheme so that I can see what some changes I am in interested in, will look like?

When you make a workflow scheme by copying an existing workflow scheme, it automatically copies the Description text of the original workflow scheme to the new workflow scheme. If the original scheme said "Generated by...", the copy will say the same thing until you edit that description. The new scheme can be edited safely.
I am not seeing an option to edit the actual copied workflow. I want to remove some status' as well as transitions but I am not able?

Are you talking about workflows or workflow schemes?
You said you copied the workflow scheme. That new workflow scheme should appear in the Inactive section of the Workflow Schemes administration page, with an option to edit.
Note that copying a workflow scheme does not also copy the workflows that are used in the original scheme. Those have to be copied separately in the Workflows administration page, and then associated to the new copy of the workflow scheme.
