Email Handlers Keep Failing - Fixed after rebuilding until next failure

We have a few mail handlers configured that have worked for months with no issues.  All of a sudden, we have one that keeps failing.  

Problem: The mail handler will pick up the email out of the mailbox, but never creates the JIRA issue from it

Solution: We delete the mail handler and rebuild it exactly as it was.  The issues are then automatically created from inbox again until the next failure.

• Is this a Server or Cloud instance?
• How long after re-creating it does it fail?

If this is a Server instance I would turn on debug logging for mail and review the logs upon failure and see what's going on.  Once you review the logs, if you're still uncertain as to what's going on please place the log snippet from the time of failure here and we'll take a look and go from there.
