How do you customize email content from automatic notifications from Jira? An example is for status changes, I would like to add more fields to the email content (example: Epic).

Adding to what Trudy said already, you could use automation to set a custom body and send custom notifications, such as in the simple example below:

If you are referring to the notifications that are sent internally (not Jira Service Management Customer Notifications) to Jira users, there is no support natively for customizing the emails. And Atlassian has stated that they don't intent to implement that feature request per

There are third party apps available from the Atlassian Marketplace that give you more features around managing notifications. Are you willing to consider a third party app?

Another option is to disable the notification sent based on the Notifications Configuration for the project, and send a custom notification using an Automation Rule.
