Is there a way to create a gadget that will be able to show me all the epics of a current project but show me the data from the child work items on how long things are in progress or Done ?

I have been trying to use the custom list gadget to represent this but I am unsure if this is even possible ?

I'm afraid that this is not possible by using the Jira native gadgets. A possibility would be to look for a plugin on the Atlassian Marketplace capable of providing this information.
If you're considering using an app, our Great Gadgets app offers a Pivot Table & Pivot Chart gadget that can display the progress of epics (and initiatives) based on their Stories, Tasks, and even sub-tasks.
With this gadget you can display the progress by count, sum of story points, or percentage of completion (by count or sum of story points) in form of tables, heatmap tables or charts of various types. Not sure if this can be achieved natively. However If you are fine to explore a mktplace solution, I can suggest our app
The app also allows you to view your project issue hierarchy in a tree view. You can view %complete progress at each parent level. It rolls up the time tracking fields, story point or numeric fields at each parent level. The app can be added to a dashboard as well.
