Epics auto-generated from stories with certain label

Is there a way to create an epic with some JQL that will auto-populate that epic from stories that have a certain label?

Yes.  You can do something like this:

• TRIGGER: Field Value Changed (Label)
• CONDITION: Label contains YOURLABEL
• ACTION: Create Issue
• ACTION: Edit Issue (Remove the label)
  I add this step because this will ensure that if someone adds another label in the future it won't trigger creation of another Epic
