I would like to view every user update made to Jira issues. Is this possible?
Every update to the ticket, whether it's a status change, a comment, everything that's done on te ticket, and that's done by user.

You can look into updating your project notifications. Depending on if you want the notifications for a single user or group.
Navigate to Project settings -> Notifications. Please be aware of making any changes to the existing scheme it might inadvertently affect other projects as well.
