Is it possible to make a custom field update automatically? With an external source, for example ?

You can use API for that matter, if that's what you mean by external source:

an external system could call the update issue REST API in order to automatically perform some operation on JIRA. Another way is to implement your own field on jira so that it can automatically retrieve value from some external system.

BTW, your requirement is too generic to provide you a possible solution.
