I need to know if it is possible to get a graph showing the number of unexpected tasks (we have already created a tag for those tasks so they have been identified) to evaluate the number of them that arise for each project and sprint.
What do you mean by tag? If you mean Label that isn't the direction I would suggest. Rather, create a custom field, e.g. Creep (type checkbox) and you can then create a filter where that value is true. Using this filter you can then use gadgets or reports to help visualize the task-creep.
