i have a question about the completed projects;
What to do with completed projects? Do they need to be archived or should they be saved or are they going to create a special category or should they be deleted so as not to create confusion?

It really is up to you. Rarely do I delete a project but if it really has zero useful data I have done so. Sometimes I simply leave them be. Ultimately I will archive them by setting the permission scheme to one where on the admin can access.
Agree with Jack - usually change to a permission scheme with only Admin access. And even then, I also change the Project Category to Archived or something like that so it doesn't appear in any of my reporting.
