I would like to set up Jira so that, based on emails with a specific subject text, tickets can be opened, updated, and closed without having to enter Jira. Is it possible?

Jira already has the incoming email handlers. Although with specific subject text, you can use automation for Jira to ensure the tickets actually stay created. Other than that, the email handlers should just handle everything.
There's one problem though, if you're on JSM (Jira Service Management), you should use the email handler within JSM as the incoming email handler for Jira would typically require a license for each user if you want to be able to identify which users created the ticket if not then you can use a predefined reporter that's a valid Jira user.
In essence, Jira is robust and you can basically think of a solution to suit your needs and how you work.
