Hi @Paul Bouzakis - Head to Jira settings > Products > Jira Software configuration > Parallel sprints to get started. You can also check out the documentation on parallel sprints for more information.

Note though that this is only for classic projects. Jira next-gen doesn't have parallel sprints.
