Is there a way to hide (not delete) one of the issue type of a project? If yes, how?

In native jira, you cannot hide any issue types.
You should make use of Add-ons to hide the ticket types.

If your project is company managed, you can set up an issue type scheme that does not have the issue type in it. The following support articles explain how to manage them and associate them with your project:
If you remove an issue type from a project's scheme and there are existing issues of that type, you will have to migrate those issues to another type. How you do that is also described in short steps in the first support article.
