I have a KANBAN board, which shows all task being done in all projects. As this board is for a pure management view, I don't want them to see which person is working on which task. Is it possible to hide the resource picture / assignee icon in a project or KANBAN board?
You can't modify the default template as far as I know - so it's not possible to remove or hide the Assignee icons (even via Field Configuration, which has no impact on board icons).
You could utilise a custom field for "Assignee" instead - but I would advise against it, given the permissions, rules, etc which are attached to the default field.
Another alternative would be a Dashboard to visualise a management summary - that way you could show a filtered list of results without inclusion of the Assignee field, giving you more flexibility.
Is there a specific reason why showing Assignee would cause issues for management?

It would cause an issue with the assignees. Some of them are afraid of being controlled by mangement. Like Micro-management of single resources.
I also use the board for an allignment meeting. There, it doesn't matter.

I would consider the Dashboard approach as the optimum solution if that's an option!
It allows you to summarise more - either showing filter results without inclusion of the Assignee field, or more general statistics about team progress rather than card-by-card.
That way it becomes more team-focused, rather than user-focused :)

I dont think there is an option for that.
i would suggest you to look into the option of creating a dashboard with filter results gadget that displays only the fields that the management interested in seeing.
