How can I add a sub-task type to a Gen 2 board?

I'm trying to move over a few projects into one new one using Gen 2 for the new roadmap functionality.

I can't seem to find a way to add a sub-task type to copy items from an existing project. Sub-tasks are enabled at a global level. Any ideas?

Next-gen projects do not yet support sub-task types.
