How can I assign different person to the different labels?

We are adding FE and BE labels to the issues. And X is preparing the FE releases, Y is preparing the BE releases.

I want to change the assigned person according to the label when the issue became to the "production-ready" status.

Rather than with Labels, use Components; Assign a component lead. As when the issue is created with that component, the assignee gets it assigned.

Short answer: not with out of the box features, although there is a simple work-around.

Longer answer:

There may be a marketplace addon for purchase which does this specifically. 

You may also implement this with the built-in automation rules, triggered on a field change for labels.  I recommend pausing to ponder edge cases, like changes to people/skill area and what-if there are multiple applicable labels, etc. before you get started and then experiment with it.
