How can I define format of the "Due date" field?

Hi all!

I've relized that the format of the "Due date" in some of the projects is in English format (MM/DD/YYYY), and in other projects it is defined in DD/MM/YYYY. How can I change the format file of this field to DD/MM/YYYY? Is there any way to do it for all the projects in one action, or it must be done project by project?

you can't control that field independent of other dates. Go to admin > System > Look and feel and look at the Date formats area
