How can I determine which issue types will appear on active sprint board?

Can I remove tasks and sub tasks from active sprint board view?

I want to display only user stories there. Is it possible?

Set the board filter to exclude them.  If, for example, your board filter currently says "project = X", then use "project = X and issuetype in standardTssueTypes() and issuetype != task"
