I know there are status properties which can be used to disable the edit functionality such as 'jira.issue.editable'. However this disables any type of edit functionality and prevents users from deleting or editing their log work. Also removing the 'Edit Issue' Permission does the same thing.
The only 'workaround' I could do is to remove all the fields from the edit screen but this still allows user to edit the issue using the 'bulk edit' functionality

Have you tried to restrict "Edit Issues" (under Issue Permission) but allow "Work On Issues" (unter Time tracking permissions)?

This was the solution I was going with and implementing. However my only concern was that if I restrict the 'Edit Permission' it would have an impact on filling of fields during transitions..
