I played around in the free version with my own account and was able to create new sprints and the start and end dates would auto populate based on the last sprint created. After switching my company over to using Jira I have been setting out multiple projects and the dates are no longer auto populating based off the last sprint that was created.
Is there a setting I am missing? As I understand it, it should by default auto populate based on the previous sprint.

It is painful to plan sprints for large number of teams and manually enter Sprint dates repeatedly for multiple teams for few quarters.
As Jira has already auto-populate in place they have to just remove the condition to check if last sprint is closed.
Here is what Jira's Rovo is also suggesting. Hoping you would review and advocate to prioritize this change.
