How come you can only view the Due Date field when you Edit an Task? I want to be able to see this due date in my at glance for all tasks and issues. How do I set this up?

I suspect you can't see the Due Date field in issues where one is not set. As long as it's populated, it should show the value when viewing the issue detail. It IS a bit of a pain to have to edit the field to get a value in there to make it display (at which time you can change it directly from the detail view).
If you want it on all of them so you can edit directly on the detail view in all cases, you can set an arbitrary yet consistent value to that field (so you can filter that OUT of searches to find meaningful due dates and/or know at a glance if it's real or arbitrary). This isn't my preferred way of running BUT we have some users here that want it that way so I made it that way.
Indeed, Mike is right. Currently a field is NOT displayed on issue view screen if it has no value set. There's an open feature request here, so feel free to vote and watch.
