I'm workin in an gemran authority, we're using the so called "simplified Jira workflow" in our Simple-Scrum projects.
When an issue is done - really solved, tested and done - , I would like to mark it as completed - or resolved....what ever.
Currently this field is always empty and all of our team are unable to access it, means, there is no drop-down list or anything to select a value form. I assume, the access is prohibited by our admins, but maybe there is a workaround....maybe a kind of script...export-import*?

To set the resolution manually, there needs to be a workflow screen associated with the transition in your workflow into a done status. Basically, it is just a simple screen with the resolution field on it. Ideally, the workflow transition also has a required field validator to enforce a resolution to be filled out.
From your description, it looks as though you don't have administrator permissions. And unfortunately these are needed to configure the workflow with the above screen and validator.
If you could reach out to a Jira admin in your organisation with this information, they should be able to fix this for you.

If you have access to the workflow and can edit this, you might be able to ad a post-function that auto sets the resolution when the issue gets to a Done state. Does not fix the history though ...
