I would like to update any sub-task status to a status. The sub-task status default is in backlog. When the Story updates to Selected for Development, I would like the sub-tasks to also update to Selected for Development (it's actually a different open status, but I can take care of that). I do not see a post process for sub-task status in the transition detail screen. Is there a method to do this?
I am not sure what add-on you have installed on your cloud instance but if you look at the post functions of a specific transition like to-do > In Progress check if you already have a post function there that says "Transition Sub-Tasks..."
This can be achieved with the help of Jira Suite Utilities add-on.

No, in most cases, people don't want to assume that just because a story starts, the sub-tasks automatically follow. It's perfectly valid to have a set of sub-tasks that have not been looked at, even though their story may be well be quite a long way through its own process. So Atlassian have never put this sort of automation into Jira, and you need extensions to cover it.

Then, it probably should be an optional post function of the transition process? That's why, I believe the post function options are offered, it's just not a selectable item. Obviously, there's a need, or it wouldn't be in a paid version of Jira Suite, I guess.
