How can values be removed from the Labels field?

There are many items in our Labels picklist that need to be removed, but I cannot find in "Custom Fields" to edit and remove any values.

Hello Vickie,

The labels field is pretty dynamic, as such the options that appear in the labels picklist pull from all of the different values that exist on issues.

If you want to remove an option from the picklist, you would need to do a bulk update in Jira to remove that specific value from the labels field. Once removed, if that label value does not exist on any Jira issue, it will no longer appear in the picklist [ref here].
