How do I add a field "Estimated Hrs" or Original Estimate" to a X-Axis in a two dimensional chart? Or how do I add fields to select from in a chart for my Dashboard.

Original estimate isn't a field that can be selected here. I'm not sure how that would really make sense to be honest but maybe I'm missing your point. Imagine that original estimate could have hundreds of different values. Some issues could say 30 minutes some could be 15 minutes some could be three days etc. What exactly is your goal here? I what data do you want to present and why? Understanding this will help us identify the best Dashboard gadget do use if it exists at all.
Since capacity planning in Advance Roadmaps for Kanban boards/teams isn't an option in Jira right now (only sprints),
We have created stories for 6 months out with original estimates for work we know that our Partners will perform each day like BAU, OnCall, KTLO, Admin (Docs, training), etc. So when someone comes to us with a project using one of our team members, we can look out 2 or 3 months to determine their capacity and which Partner has the capacity to perform the work.
We don't want to resort to manual spreadsheets to determine capacity. I hope this helps you to understand why I am asking to use those fields.

Thanks it helps a bit but for sure dashboards aren't IMO great at capacity planning. Maybe consider an addon app or connect to PowerBI.
