I have two instances of JIRA that were set up in error when we first started using the product. How do I cancel these items so that we aren't billed for them?

In this case: You have to cancel the subscription and then DELETE the product.
Ref this for steps.
Note: Make sure you don't have any data that you need in the product not required; once deleted, that's gone !
