I have a project called Human Resource which I use for various HR related tasks including Hiring and Terminating.
I created some issue types called "New Hire' and "Termination".
I want to add a checklist using Checklist pro that's associated with New Hires and another checklist for Termination.
I know how to create a YAML and hide the Checklist YAML field but I'm struggling on how to make a Create Issue screen for New Hire and Termination issue types.

If I understand your requirement correctly, you don't need Checklist Content YAML field at all. You also don't need any changes related to Jira screens.
Please take a look at the default checklist concept in our documentation.
It is as simple as letting the Issue Checklist know which checklist template should be applied for the selected issue types, i.e. "New Hire" and "Termination" in your case.
Issue Checklist allows setting different default checklist for different issue types which is what you need.
